Las croquettes from the streets of Spain

I fell in love with perfectly stuffed potato croquettes in Madrid, where they are both street food and a separate dish in heute cuisine restaurants. It's the perfect comfort food. Cozy, silky and savory filling adds color and more intense taste.

You will need:
• 500g of potatoes, boiled with the peel
• 25g of butter
• 2 egg yolks,
• 1 egg
• 50g of cheddar

For the filling:
• Basil pesto
• Sun-dried tomato pesto
Peel and mash the boiled potatoes. Mix with butter, cheese, egg yolks, add salt and pepper. Refrigerate for at least an hour. When the mass has hardened, form balls and fill them with a teaspoon of basil pesto or sun-dried tomato pesto. Roll the balls in flour, then in beaten egg and breadcrumbs. Fry in a deep fryer or in a pot of heated oil.
